Established in 1960 by local coffee producers, the Coopedota cooperative has continued to operate as an important economic and cultural resource for the town's tight-knit community whose main industry is centralised around coffee production. Coopedota seek to provide aid with financing, coffee processing and exportation through an economy of scale and has grown to incorporate over 900 members, producing approximately 60,000 69 kilo bags of coffee per year. All Coopedota producers process their coffee at the cooperative owned mill. The mill itself is impressive with its colourful maze of pulpers, fermentation tanks, sorting lines and silos. Cherries are dropped off at the main entrance, being separated into specific qualities and certifications. These villages are situated within the regions of Gideo, Gedeb in Ethiopia. The Region The region of Gedeb is renowned for its perfect climate for coffee growing. The majority of coffees grown in Gedeb are local landrace varieties (which are often also called Ethiopian heirloom). Other varieties grown in the region were developed by the Jimma Agricultural Research Centre (JARC). JARC is an important research centre for Ethiopia and has done a great deal of work on developing disease-resistant and high-yielding varieties that still demonstrate quality in the cup. The Farms Most farmers in the region farm on fewer than 5 hectares with cultivation methods remaining traditional - coffee is grown as part of an integrated ‘coffee garden’, and intercropped with other food crops. The Process Red cherries are hand-picked and sorted before placing into fermentation bags and sealed. Nitrogen and oxygen are removed from the bags and CO2 is added, the process is repeated several times until the required alcohol content and fermentation are reached. Coffee is finished with further natural fermentation and drying on raised beds. The cherries are often handpicked and graded according to the parchment weight prior to processing. After being delivered to the wet factory, the coffee is pulped and fermented in washing tanks for 24 to 48 hours.
