The Process Usually a coffee cherry contains two symmetrical beans at its centre, however the peaberry is a mutation resulting in the formation of a single, pea shaped bean, usually accounting for 5% of a farmers harvest. What causes this mutation is currently unknown and it is not able to be intentionally replicated so farmers must work collectively to generate enough Peaberrys to sell. The Peaberry The Peaberrys unique shape drastically alters the beans development, from its beginnings absorbing more sugar than a usual coffee cherry, to its roundness making it absorb heat more evenly in a once its inside the roasting drum. The Kenya Peaberry is a highly sought after coffee by coffee drinkers, so we are thrilled to be reintroducing it as one of our offerings. These plantations are cultivated to produce coffee that is both unique and exquisite. The coffee plant itself is a marvel of nature. It takes about two years to yield its first harvest, but it isn’t until four years later that it reaches full productive stability. During the flowering season, the plantations are adorned in white blossoms and filled with an irresistible aroma. When harvest season arrives, the valleys and mountains are beautified by the vibrant red and yellow hues of the coffee cherries. Rigorous quality control measures ensure that each bean retains the unique characteristics that make Tarrazú coffee so special. When the trade winds blow through the Los Santos region from October to March, the coffee harvest intensifies, marking one of the most beautiful and exciting times of the year for this community. Coffee harvesting is central to the history and identity of the region, representing cherished moments and memories shared among families and communities. Currently, nearly 15,000 immigrants from Nicaragua and Panama have joined the community to participate in the coffee harvest.  At CoopeTarrazú, the efforts of the harvesters are guaranteed with fair and equal payment for each box of coffee collected. The remuneration standards are regulated by the Ministry of Labor and the Costa Rican Coffee Institute (ICAFE), ensuring decent working conditions for all our workers. This commitment to fair treatment and high standards not only supports the workers but also upholds the quality and integrity of the coffee itself. The rich volcanic soil of the region, combined with the cool mountain air, enables the coffee cherries to develop slowly, resulting in beans that are dense and packed with flavour.  This region is not just known for its coffee but also for the rich cultural heritage of the Toraja people, whose traditions have been woven into their coffee production methods. Coffee is more than a crop here; it is a way of life, with coffee trees often grown on small plots around the villagers' homes. Families work together to pick the cherries at peak ripeness, ensuring that only the best fruit is harvested. Coffee cultivation is a communal activity, with every member of the family participating in the processing stages, from washing the beans to drying them under the sun. The Toraja people’s approach to coffee is deeply connected to their cultural values, which emphasise respect for the land and the preservation of ancestral traditions. Coffee trees are even found growing along the edges of rice paddies, reflecting the harmonious balance between subsistence agriculture and cash crop cultivation. While rice remains the dietary staple, coffee serves as an important source of income for these communities, helping to sustain their way of life while sharing their unique cultural heritage with the world. Coffee production began in Peru in the 18th Century and eventually made its way to the Chanchanmayo Province in the country's west. This province lies within the vast Andes mountain range, which spans the majority of South America’s west coast and its unique location is home to a diverse and rich array of life including over 4000 native species of butterflies. Coffee production is orchestrated within the Cooperative Agraria Cafetelera Ecologica, or ‘CACE’. The CACE is spearheaded by agricultural engineer, Felix Marin and hosts over 120 coffee producers. Despite challenges such as political instability and transportation issues, Marin has dedicated himself to growing the region's coffee production as a means of creating social progress within Peru. The coffee harvest in Alto Palomar takes place during Peru's dry season, where farmers carefully inspect and hand-pick the ripe cherries from the trees. Once picked the fruit of the cherries is removed via wet processing to expose the inner coffee bean. The region’s abundant water resources result in wet processing being the primary method of coffee processing, giving Peruvian coffee its distinct, clean, and bold flavour profile The beans will then undergo a drying process within the facilities of the CACE before they are ready for dispatch.  This striking single origin is both nutty and sweet, with tasting notes of Honey, Baked Apple, and Ovaltine. The Farm Nigusse Gemeda’s career in coffee spans nearly 27 years. After inheriting land at age 16, he initially operated in total isolation, transporting his harvest via donkeys and mules to reach local markets. His trajectory changed permanently in 2020 when he won the inaugural Ethiopian Cup of Excellence (COE). His entry from Karamo Kebele earned a record-breaking 91.04 score, the highest in the competition’s Ethiopian history. This milestone allowed Nigusse to establish Karamo Coffee Export, moving from local commodity sales to direct global trade and specialised processing.
