This vibrantly aromatic coffee has been sourced from El Rubí farm which is located in the Department of Huila and the municipality of San Adolfo in Colombia.
The Farm
Comprising of 6 hectares El Rubí farm was purchased 25 years ago by Heiner and Johanna who live on the neighbouring farm called El Diviso. They had previously specialised in growing Caturra and Castillo varietals however they also now grow Papayo, Pink Bourbon and SL-28 varietals. This particular coffee is a Pink Bourbon, and they have 7,300 Pink Bourbon trees planted on El Rubí which they fertilise using organic material, mixed with phosphoric rocks and dolomites to restore the soil.
The Coffee
The Pink Bourbon varietal is a hybrid of the Yellow and Red Bourbon varietals. This varietal has peachy, pink cherries and producers believe this hybrid is especially resistant to rust. Pink Bourbon is quite a rare and coveted varietal known for its brightly fruity, sweet and floral flavour.
The Process
This coffee undergoes two fermentation steps whilst it is being processed. Firstly the cherries are subject to carbonic maceration for 36 hours and undergo a light depulping process. After this they are subject to anaerobic fermentation where the coffee is placed in a temperature controlled environment for an additional 24 hours. After this process, the beans are dried in the sun for approximately 14 - 18 days.
This coffee shines when brewed as a filter-style coffee with tasting notes of mulberry, champagne & orange peel.
