This delectable and velvety coffee comes from the municipality of Pasto, within the department of Narino in the southwest of Colombia.
Grown on the lands surrounding the Galeras Volcano, the coffee trees are planted in soil covered with a thin blanket of volcano ash. This is a rich soil which contains many valuable minerals which are highly beneficial for growing coffee.
As a result of the warmer climate due to long hours of sunlight and warm evenings, there is an incubation effect which occurs and protects the coffee plantations from cold changes. The coffee trees have a slower development but when the cherries ripen they acquire a heightened sweetness, acidity and an incomparable flavour.
This coffee features tasting notes of cherry, dark chocolate and caramel making it a delicious espresso to be paired both with or without milk.
