Introducing our latest single origin to feature in our Black Label range! This microlot has been sourced from Santa Monica Farm in Colombia, and is a sweetly aromatic and complex cup.
The Farm
Santa Monica is a small farm comprising of 6 hectares in the village of El Libano, a short drive from Bruselas town. The Bruselas region is known for its high altitude and favourable growing conditions for growing coffee. The Daza family work this small farm with their two sons Alexis and Diago who are striving to expand their knowledge of coffee processing in order to continue to grow and develop their family legacy.
The Varietal
This coffee is a Caturra Chiroso microlot. Chiroso is a fairly new varietal, thought to be a mutation of the Caturra variety. Originally cultivated for its resilience and high productivity it is now being celebrated for its complex and floral cup profile.
The Process
The cherries are strictly selected by hand to ensure only mature cherries are chosen. The cherries are then fully washed, with a short and controlled fermentation of 20 hours resulting in a complex, sweet and fruity coffee.
Our coffee from Santa Monica Farm in Colombia features splendid tasting notes of guava, star fruit and almond butter. It shines when brewed as a filter style coffee and is best enjoyed without milk.
