Arabica coffee was first introduced to Kenya from Ethiopia by Aden Catholic missionaries. Kenya has excellent conditions for cultivating coffee, especially in the highlands where there is both a stable climate and rich volcanic soil.
The cherries are often handpicked and graded according to the parchment weight prior to processing. After being delivered to the wet factory, the coffee is pulped and fermented in washing tanks for 24 to 48 hours. The parchment coffee is then cleaned and soaked to remove any remaining fruit and spread on raised drying tables. During drying, the parchment is frequently turned by hand and when the parchment has dried to the desired moisture level, it is taken to the dry mill to be hulled.
Featuring tasting notes of orange peel, plum and dark chocolate this delightfully juicy coffee shines best as a long black.
