Introducing our new single origin sourced from farms around the Halaka Village in the Guji Zone of Ethiopia.

The Area

This coffee grown on multiple farms surrounding the village of Halaka. Halaka is an up-and-coming area of coffee production situated in the Guji Zone, in the Oromia region of Southern Ethiopia. As well as possessing optimal coffee growing conditions, the Guji Zone is known for its mineral rich land where gold and precious stones are found.

The Process

The flavour of this bean can be attributed to its processing. Honey process, which is rare in Ethiopia, means a majority of the cherry is removed from the bean, however a thin layer of fruit remains as it dries. The remaining thin layer of mucilage has a honey-like consistency, which is where the process gets its name. This process is commended for its low impact on the environment by using much less water than other processing methods, and its ability to produce complex flavours.

The Impact

This coffee has been hand picked - a more sustainable and environmentally friendly alternative to machine picking processes which can cause pollution and soil degradation. The honey processing method uses substantially less water than other common techniques.

The Varietal

Heirloom (also known as Landrace) refers to one or more unknown varietals coming from the same lot. Coffee plants in Ethiopia have been growing and cross-breeding for centuries (there are between an estimated six and ten thousand unidentified coffee varietals in the country), so pinning down specific varietals under the Heirloom umbrella proves to be difficult. Guji-sourced Heirlooms are notoriously jam-like in flavour.
