We have sourced this delightful microlot from smallholder farms located near the villages of Kebele and Lallesa. These villages are situated within the regions of Gideo, Gedeb in Ethiopia.
The Region
The region of Gedeb is renowned for its perfect climate for coffee growing. The majority of coffees grown in Gedeb are local landrace varieties (which are often also called Ethiopian heirloom). Other varieties grown in the region were developed by the Jimma Agricultural Research Centre (JARC). JARC is an important research centre for Ethiopia and has done a great deal of work on developing disease-resistant and high-yielding varieties that still demonstrate quality in the cup.
The Farms
Most farmers in the region farm on fewer than 5 hectares with cultivation methods remaining traditional - coffee is grown as part of an integrated ‘coffee garden’, and intercropped with other food crops.
The Process
Red cherries are hand-picked and sorted before placing into fermentation bags and sealed. Nitrogen and oxygen are removed from the bags and CO2 is added, the process is repeated several times until the required alcohol content and fermentation are reached. Coffee is finished with further natural fermentation and drying on raised beds.
With tasting notes of raspberry, cinnamon & dark chocolate this coffee shines when brewed as a pour over and is best without milk.
